Happy St. Patrick's Day to Everyone!
Wanted to share a tip for St. Patrick's Day favorite, Corned Beef & cabbage recipe. When simmering the corned beef, use apple juice or apple cider instead of water. This makes the beef sweet & tender! This makes me smile!
If you need recipe:
In Dutch oven put in rinsed corn beef & spice packed. Add apple juice to top of meat. Simmer 6 - 8 hours till meat fork tender, 160 degrees.
Take out meat, set aside. Add to warm liquid, 6-8 cut wedges cabbage, 6-8 small potatoes, 6-8 cut carrots, 6-8 small white onions. Cook 15 minutes on higher heat till tender.
While vegetables cook, make glaze for beef. 3 tablespoons prepared spiced mustard, 1 tablespoon horseradish sauce, 1/2 cup brown sugar, 1/2 teaspoon ground cloves; mix together, spread over meat & put in 350 degree oven for 20 minutes.
Place pretty on platter all ingredients, mix some of the leftover glaze with some of the stock for people to use as sauce.
Enjoy, forget diet!
